How is it already FEBRUARY?! I can't believe how fast the past year has went by. I have an 8 month old...when did that happen?? I feel like she was just born, how can she be 2/3 of a year old already?? Just look at that face.

Here we are post Super Bowl...or as I like to call it "Post JT concert." I totally have been eating TERRIBLY lately and my gut can feel it. The Super Bowl didn't help with all the tasty treats and yummy dips....mmmmmm. But the way my body has felt is NOT worth it even though I wish it were.
Today I want to hop right in and share one of my favorite recipes that is healthy and yummy and so so very cheap and easy to make! I've found that this was the easiest way to incorporate kale into our diet and get zero complaints from my not-so-kale-loving husband. This is one our favorite lunches, but it's a great dinner too!

So here goes... We just call these Yummy Kale Bowls, but you can call them 3 Ingredient Magic, or Best Healthy Lunch Ever. Just kidding...we’ll stick with Yummy Kale Bowls.
For the longest time I thought that eating healthier and adding more veggies to my life was going to be expensive. This recipe proved me wrong! The bag of frozen sweet potatoes I buy are $1.88 each. Garbanzo beans are about $0.80 each and a small bunch of fresh kale is usually under $2 at Walmart, and this recipe uses less than half of what you get. (This week I bought the bag of chopped kale for about $3.50 at Aldi but I will only use about 1/4 of the bag) All in all this dish takes about $3.00 to make and it is plenty for two people. Take THAT Taco Bell.
YUMMY KALE BOWLS
1 12 oz bag frozen sweet potatoes
1 can garbanzo beans/chick peas
2 heaping handfuls of chopped kale
1 Tbs seasoned salt
1/2 Tbs Cumin
1/2 Tbs Garlic Salt
1 1/2 Tbs Oil divided
Drizzle of Ranch Dressing (optional but definitely recommended)
Preheat oven to 400 degrees F. Heat the Sweet Potatoes as directed on packaging. The ones I buy are microwaved for 4 1/2 minuets or just heated in sauce pan with water until tender.
While the potatoes cook, drain and rinse garbanzo beans. Pour in medium bowl.
When potatoes are heated, mix in bowl with garbanzo beans and add 1 Tbs oil, seasoned salt, garlic powder, and cumin. Mix well.
Pour beans and potatoes onto baking sheet and bake for 10 minutes.
While baking, add the kale to the same bowl you used to season the potatoes and beans. Add about 1/2 Tbs oil and mix into kale. I like to use the same bowl so the leftover seasoning can flavor the kale slightly.
After the first 10 minutes, remove pan from oven and toss in kale. Season with salt and pepper if you’d like. Bake an additional 6-8 minuets.
Remove from oven, scoop into a bowl, and drizzle with some ranch and top with a sprinkle of seasoned salt. (You can get creative with your sauce, we’re just stuck on ranch.)

I promise even your pickiest eater will think this is yummy. There are days I crave this and get so excited to eat it! The best thing about this recipe is that it’s flexible! Don’t like seasoned salt or garlic? Change it to oregano and Italian seasoning (I haven’t tried this but I bet it would be delish!). Pretty much any of the seasonings can be experimented with and changed out and it will still be good!
